Lap Band Recipe of the Week
Fruity Cheese Pocket

This fruity cheese pocket incorporates fruit right into your sandwich!

Ingredients:

  • 1 cup nonfat or lowfat cottage cheese
  • 1 cup drained juice-pack fruit cocktail
  • 1/2 cup shredded nonfat or lowfat cottage cheese
  • 2, 6-inch whole wheat pita rounds, split crosswise
  • 4 lettuce leafs

Instructions:

  1. In a medium bowl, stir together cottage cheese, fruit cocktail, and cheddar cheese. (If desired, cover and chill mixture until serving time.)
  2. To serve, line each pita pocket half with a lettuce leaf and spoon in fruit and cheese mixture.

Serves 4. Serving size = 1/2 pita.

Per serving:

146 calories, 12 grams protein, 1 gram fat, 22 grams carbohydrate, 3 mg. cholesterol, 339 mg. sodium

Note: If you don't tolerate bread, try rolling fruit and cheese mixture in a romaine lettuce leaf "wrap."
